There are two different things called "language" here, and they work differently.
The admin dashboard
The app's own dashboard — the screens you use inside Shopify admin — is available in 8 languages: English, German, Spanish, French, Italian, Japanese, Chinese (Simplified) and Arabic. This only changes what you see; it has no effect on your storefront.
Your storefront's answers
Separately, the app translates every published answer into each language your storefront actually publishes, for your help centre page, the theme blocks, and Shopify's Knowledge Base. How many of your storefront's languages get a translation depends on your plan:

Keeping translations current
A translation is checked against the primary-language answer it was made from, and is refreshed when that answer changes — unless you have edited the translation yourself, in which case it is never silently overwritten.
Added a new language to your store? The app notices it on its next daily check, or you can open Languages in the app and click Translate now.
