A multi-variant product shows as never available

On a product with variants, availability is tracked per variant, because each variant has its own unit count. If no variant has been chosen, there is no way to know which pool to check, so the answer is "unavailable" rather than a guess. Confirm the customer is selecting a variant before picking dates, and that the variant they pick is active and has units assigned.
